Mango Chicken

- 1 cup red wine vinegar
- 1 cup sugar
- 3 mangoes (can also use papaya)
- 2 lbs chicken breasts or 2 lbs chicken parts
Directions

1Mix vinegar and sugar in medium saucepan.

2Bring to boil then lower and simmer about 20 minutes.

3While mixture is simmering puree two mangoes in food processor.

4Leaving one mango to slice and serve with cooked chicken.

5After simmering vinegar and sugar for about 20 minutes remove from heat and add pureed mango.

6Refrigerate this mixture at least one hour.

7Marinate chicken in some of the mixture for about an hour (can be longer if you like).

8Make sure to leave some for basting as chicken cooks and to drizzle over cooked chicken.

9Grill or roast chicken basting at least once on each side with marinade.

10To serve: drizzle a bit of remaining marinade over chicken and add sliced mango to dish.
