- 25 green mangoes (unripe)
- 250 g currants
- 125 g raisins
- 250 g prunes
- 125 g green ginger
- 125 g salt
- 1 large garlic clove
- 2 red chili peppers (or to taste)
- 2 pints vinegar
Directions

1Mince raisins, currents, prunes.

2Mix with peppers and 1 pint of vinegar.

3Leave to infuse for 24 hours.

4Peel and slice mangoes.

5Pound garlic.

6Mix all ingredients.

7Boil until desired consistency.

8Stir frequently.

9Let cool.

10Bottle & label.

11NB -- Mangoes may be pounded with garlic if preferred.
