  • 2 1/3 c. vinegar
  • 7 c. sugar
  • 12 c. ripe mangoes
  • 1/2 c. green ginger root or candied ginger
  • 1 tsp. salt
  • 4 chili peppers
  • 2 cloves garlic (optional)
  • 3 c. raisins
  • 2 large onions, cut up

Directions

    Boil the sugar and vinegar for 5 minutes.

    Then combine all the ingredients and simmer until the fruit is tender, about 45 minutes.
