- 10 large green mangos
- 2 lb. sugar
- 1/4 lb. dates
- 1/4 lb. preserved ginger
- 1/4 lb. sultanas
- 6 chilies
- 1 oz. garlic
- 1 Tbsp. salt
- 3/4 bottle vinegar
Directions

1Peel and slice mangos.

2Salt and cover with water overnight. Strain and wash.

3Boil all ingredients (except sugar) until tender.

4Add sugar and simmer another 2 hours.

5Bottle and seal.
