Ingredients

  • 12 ripe mangoes
  • 250 g raisins
  • 125 g green ginger
  • 1 large garlic clove
  • 125 g tamarind pulp
  • 250 g salt (or to taste)
  • 250 g sugar
  • 1 quart vinegar

    Peel mangoes.

    Cut flesh into strips.

    finely chop OR pound garlic.

    Peel & finely cut ginger.
  5. 5
    Scrape tamarind & discard seeds ( if using fresh).

    Mix all solid ingredients.

    Boil vinegar.

    Pour over the mixture & stir well.

    When cool bottle & lable.
