  • 2 ripe mangos, peeled and diced into 1/2 inch pieces
  • 1/2 cup chopped scallion (green part only)
  • 1/2 cup diced red bell pepper
  • 2 tablespoons finely diced fresh jalapenos
  • 2 tablespoons chopped fresh cilantro
  • 2 small cloves of garlic, minced
  • 2 tablespoons freshly squeeze lime juice
  • 1/2 teaspoon salt
  • 1 teaspoon extra-virgin olive oil
