Mango Lemonade

- 2 lg. mangoes
- 2-1/2 cup water
- 2-1/2 cup fresh lemon juice
- 1-1/3 cup sugar
- 2 tbsp. sugar
- Mint sprigs (optional)
Directions

1Peel, pit and chop the mangoes.

2In a food processor, puree the mango, stopping once or twice to scraps down the sides of the work bowl.

3There should be about 2 cups puree.

4In a pitcher, combine the mango puree, water, lemon juice and sugar; stir well to dissolve.

5cover and refrigerate until very cold, at least 5 hours and preferably overnight.

6Taste and add additional sugar if desired.

7Pour the lemonade over ice in tall glasses.

8Garnish with mint if desired and serve immediately.
