- 2 cups brown rice
- 4 cups water
- 1 tablespoon fresh lime juice
- 1/2 cup chopped fresh cilantro
- 1 mango, peeled, pitted, and cut into 1/2 inch cubes
Directions

1Bring the brown rice and water to a boil in a saucepan. Stir the lime juice into the rice, reduce the heat to medium-low, and cover; simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
