Mango Macadamia Cheesecake

  • 1 oz graham crackers, crushed
  • 1 oz macadamia nuts, ground, plus extra, toasted, to serve
  • 1 tsp ground cinnamon
  • 1/3 cup butter, melted
  • 3 cups cream cheese
  • 3/4 cup brown sugar
  • 3 None large eggs
  • 1 tsp vanilla extract
  • 1 x 14 oz can sliced mangoes, drained, 1/2 chopped
  • 1/4 cup all-purpose flour
  • None None Whipped cream, to serve

Directions

    Preheat oven to 350°F. Line the base of a 9 inch diameter springform pan with foil.

    Combine graham cracker crumbs, macadamia nuts and and cinnamon in a bowl. Blend in butter, mixing well. Press firmly into the base of prepared pan. Chill for 20 mins, or until firm.

    Beat cream cheese and sugar together until smooth. Add eggs one a time, beating well after each addition. Mix in vanilla.

    Fold chopped mangoes and flour into cream cheese mixture. Pour into crust. Bake for 45-50 mins. Allow to cool. Serve topped with whipped cream, toasted macadamias and remaining mango slices.
