Ingredients
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 1/2 c. sugar (or less, depends how ripe/sweet mangos are)
- 3/4 c. salad oil
- 3 beaten eggs (can use Egg Beaters)
- 2 tsp. vanilla
- 1/2 c. shredded coconut (optional)
- 1/2 c. chopped nuts (optional)
- 2 c. chopped mangos
Directions

1Preheat oven to 350°.

2Grease 24 cupcake tins.

3Sift dry ingredients together.

4Add mangos, oil, eggs and vanilla and mix well.

5Add nuts/coconut if used.

6Pour into muffin tins and bake 25 to 30 minutes.

7Can also bake in small foil bread pans to use as gifts.
