Mango Muffins

Ingredients

  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 1/2 c. sugar (or less, depends how ripe/sweet mangos are)
  • 3/4 c. salad oil
  • 3 beaten eggs (can use Egg Beaters)
  • 2 tsp. vanilla
  • 1/2 c. shredded coconut (optional)
  • 1/2 c. chopped nuts (optional)
  • 2 c. chopped mangos

Directions

    Preheat oven to 350°.

    Grease 24 cupcake tins.

    Sift dry ingredients together.

    Add mangos, oil, eggs and vanilla and mix well.

    Add nuts/coconut if used.

    Pour into muffin tins and bake 25 to 30 minutes.

    Can also bake in small foil bread pans to use as gifts.
