  • 1/2 c. butter or vegetable oil
  • 3/4 c. sugar
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 c. mango
  • 1 tsp. lime juice
  • 1/2 c. chopped nuts

Directions

    Cream the butter and sugar.

    Add eggs one at a time.

    Beat in dry ingredients, then fold in mango, lime juice and nuts.

    Bake in 9-inch loaf pan at 375° for 1 hour.
