Ingredients
- 1 3/4 c. sifted all-purpose flour
- 2 1/4 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1/3 c. shortening
- 2/3 c. sugar
- 2 beaten eggs
- 1 1/2 c. diced mango pulp
- 3/4 c. walnuts or pecans
Directions

1Have all ingredients at room temperature.

2Preheat oven to 350°.

3Sift together first 3 ingredients.

4Beat shortening and sugar until creamy.

5Beat in eggs and mango pulp.

6Slowly add dry ingredients to creamy mixture until smooth.

7Beat in eggs and pulp until well blended.

8Fold in walnuts or pecans.

9Pour into well-greased 8 1/2 x 4 1/2-inch loaf pan.

10Bake for 45 minutes to one hour until done.

11Cool before slicing.
