- 4 mangoes, peeled, pitted and cubed
- 1 cup sugar
- 2 tablespoons sugar
- 80 ml red wine vinegar
- 80 ml dry sherry
- 1 tablespoon gingerroot, peeled and grated
- 12 teaspoon white pepper
Directions

1Heat pan with clarified butter; add mangoes.

2Add sugar, vinegar, sherry, and ginger.

3Bring to a boil; add pepper.

4Cook out about 5 minutes (liquefy).

5Simmer for several minutes until proper consistency.
