- 2 plum tomatoes
- 2 tbsp. minced red onion
- 1 tsp. minced serrano or habanero chile
- 1 tbsp. fresh lime juice
- 1/2 tsp. sugar
- 1/2 tsp. unseasoned rice vinegar
- 1 tbsp. Chopped cilantro
- 2 tsp. Chopped mint
- salt
- Freshly ground pepper
