- 2-3 lbs whole milk ricotta
- 1 egg
- 1 handful of grated mozzarella
- 1 handful grated parmesan cheese
- salt, pepper and garlic powder to taste.
Directions

1Mix all ingredients together until smooth.

2Pour 1/2 cup batter onto a hot, flat skillet that has been rubbed or sprayed with oil.

3Turn once and cook until firm, but not brown.

5Mix all ingredients together to taste.

6Fill crepes with ricotta filling and roll up.

7Cover the bottom of a baking dish with sauce.

8Place manicotti in dish and cover with more sauce and some grated parmesan cheese.

9Bake at 350 degrees until bubbly.
