  • 1 lb. ground beef
  • 1/4 c. onion, chopped
  • 1/4 c. bell pepper, chopped
  • 1 (6 oz.) can tomato paste
  • 2 c. water
  • 1/4 tsp. pepper
  • 1 1/4 tsp. salt
  • 1 1/2 tsp. Italian seasoning
  • 1 tsp. sugar
  • 8 oz. cottage cheese
  • 8 oz. Mozzarella cheese, grated
  • 1 egg, slightly beaten
  • parsley
  • 1 box (12 to 14) manicotti shells

Directions

    Brown meat, onion and bell pepper. Drain.

    Add tomato paste, water and seasonings.

    Cover and simmer 30 minutes.

    Combine cheeses, egg and desired amount of parsley. Cook manicotti shells according to package directions until barely tender; drain. Stuff shells with cheese mixture.

    Place filled shells in greased, shallow baking dish.

    Pour meat/tomato sauce over shells. Cover tightly with foil.

    Bake at 350° for 30 minutes.
