- 1 lb. ground beef
- 1/4 c. onion, chopped
- 1/4 c. bell pepper, chopped
- 1 (6 oz.) can tomato paste
- 2 c. water
- 1/4 tsp. pepper
- 1 1/4 tsp. salt
- 1 1/2 tsp. Italian seasoning
- 1 tsp. sugar
- 8 oz. cottage cheese
- 8 oz. Mozzarella cheese, grated
- 1 egg, slightly beaten
- parsley
- 1 box (12 to 14) manicotti shells
Directions

1Brown meat, onion and bell pepper. Drain.

2Add tomato paste, water and seasonings.

3Cover and simmer 30 minutes.

4Combine cheeses, egg and desired amount of parsley. Cook manicotti shells according to package directions until barely tender; drain. Stuff shells with cheese mixture.

5Place filled shells in greased, shallow baking dish.

6Pour meat/tomato sauce over shells. Cover tightly with foil.

7Bake at 350° for 30 minutes.
