Manicotti Casserole

  • 1 (16 oz.) bag large shell noodles
  • 1 (15 oz.) container Frigo Ricotta cheese
  • 2 eggs
  • 1 (30 oz.) jar plain spaghetti sauce
  • 1 lb. grated Mozzarella cheese
  • 1 bunch chopped parsley
  • 1 (10 oz.) pkg. frozen peas
  • 1 lb. hamburger, cooked and crumbled (optional)
  • 1/2 c. grated Parmesan cheese
  • 1 can chopped olives

Directions

    Boil noodles and drain.

    Beat eggs, Ricotta cheese and parsley.

    Cook and crumble hamburger; drain off grease.

    Cook peas.

    Mix eggs and Ricotta cheese mixture into noodles and add 2/3 spaghetti sauce.

    Add Mozzarella cheese, cooked peas and cooked hamburger.

    Put into a large casserole dish; top with remainder of sauce, Parmesan cheese and olives.

    Cover.

    Bake for 1/2 hour at 350°.
