  • 1/2 c. onion, chopped
  • 1 garlic clove, minced
  • 1 Tbsp. butter
  • 2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
  • 1 lb. Ricotta cheese
  • 4 oz. Mozzarella cheese, shredded
  • 1/2 c. Parmesan cheese
  • 3 eggs, slightly beaten
  • 1 Tbsp. lemon juice
  • 1 tsp. salt
  • dash of pepper
  • 12 large manicotti noodles, cooked and drained
  • 1 (16 oz.) jar spaghetti sauce

Directions

    Saute onion and garlic in butter until tender.

    Combine sauteed vegetables, spinach, cheeses, eggs, lemon juice, salt and pepper; mix well.

    Fill noodles with spinach mixture, place in 13 x 9-inch baking dish.

    Cover; bake at 350° for 40 minutes.

    Heat sauce; pour over noodles.

    Sprinkle with additional Parmesan cheese, if desired.
