- 1/2 c. onion, chopped
- 1 garlic clove, minced
- 1 Tbsp. butter
- 2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
- 1 lb. Ricotta cheese
- 4 oz. Mozzarella cheese, shredded
- 1/2 c. Parmesan cheese
- 3 eggs, slightly beaten
- 1 Tbsp. lemon juice
- 1 tsp. salt
- dash of pepper
- 12 large manicotti noodles, cooked and drained
- 1 (16 oz.) jar spaghetti sauce
Directions

1Saute onion and garlic in butter until tender.

2Combine sauteed vegetables, spinach, cheeses, eggs, lemon juice, salt and pepper; mix well.

3Fill noodles with spinach mixture, place in 13 x 9-inch baking dish.

4Cover; bake at 350° for 40 minutes.

5Heat sauce; pour over noodles.

6Sprinkle with additional Parmesan cheese, if desired.
