  • 1/2 cups Lemon Juice
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Mustard
  • 1/2 teaspoons Cayenne Pepper
  • 13 cups Apple Juice
  • 13 cups Pure Maple Syrup
  • 2 Tablespoons Chopped Shallot
  • 2 cloves Garlic, Minced
  • 3 Tablespoons Soy Sauce
  • 1/2 teaspoons Freshly Cracked Black Pepper
  • 1 teaspoon Salt
  • 4 pieces Salmon
  • 1/4 cups Chopped Scallions For Garnish

    Combine all ingredients except salmon and scallions in a Ziploc bag for marinating, reserving 1/2 cup of marinade for basting 2.

    Add salmon fillets to the marinade and let sit in the refrigerator for 3 hours.

    Drain and discard marinade.

    Preheat oven to broil (500 degrees F), place fillets in a pan.

    Broil salmon 4 inches from heat for 5 minutes, remove from oven and baste with remaining 1/2 cup of marinade.
