- 1 teaspoon Dried Mustard
- 1/2 teaspoons Cayenne Pepper
- 13 cups Apple Juice
- 13 cups Pure Maple Syrup
- 2 Tablespoons Chopped Shallot
- 2 cloves Garlic, Minced
- 3 Tablespoons Soy Sauce
- 1/2 teaspoons Freshly Cracked Black Pepper
- 1 teaspoon Salt
- 4 pieces Salmon
- 1/4 cups Chopped Scallions For Garnish

2Combine all ingredients except salmon and scallions in a Ziploc bag for marinating, reserving 1/2 cup of marinade for basting 2.

3Add salmon fillets to the marinade and let sit in the refrigerator for 3 hours.
