- 1 inch Arctic char fillet cleaned and cut into 1/2 strips
- 1/4 cup maple syrup
- 1/4 cup honey
- 2 garlic cloves
- 2 teaspoons fresh ginger
- 1 teaspoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black peppercorns cracked
- 1/2 cup light brown sugar
- 1 teaspoon liquid smoke
Directions

1Heat oven to 275°F.

2In a food processor, combine maple syrup, honey, garlic, ginger, salt, liquid Smoke and olive oil until well combined.

3Grease a shallow, glass baking dish with butter

4Place char strips in dish,

5Pour the sauce over the fillets, completely covering them.

6Sprinkle cracked peppercorns and the brown sugar on top to cover all the fish
