  • 1 inch Arctic char fillet cleaned and cut into 1/2 strips
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 2 garlic cloves
  • 2 teaspoons fresh ginger
  • 1 teaspoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black peppercorns cracked
  • 1/2 cup light brown sugar
  • 1 teaspoon liquid smoke

    Heat oven to 275°F.

    In a food processor, combine maple syrup, honey, garlic, ginger, salt, liquid Smoke and olive oil until well combined.

    Grease a shallow, glass baking dish with butter

    Pour the sauce over the fillets, completely covering them.

    Sprinkle cracked peppercorns and the brown sugar on top to cover all the fish
