Ingredients
- 3/4 c. maple syrup
- 2 Tbsp. butter
- 2 eggs, separated
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. cream or half and half
- 1 tsp. Angostura Bitters
Directions

1Bring maple syrup and butter to a boil and simmer 10 minutes; let cool.

2Place egg yolks in top of double boiler and beat slightly.

3Add cooled maple syrup mixture, cornstarch, mixed with 1/4 cup of cream and salt.

4Mix well, then gradually add the rest of the cream.

5Cook until thickened, stirring constantly.

6Remove from heat and cool to room temperature.

7Stir often or cover to prevent skin from forming.

8Stir in bitters.

9Fold in stiffly beaten egg whites.

10Pour into individual serving dishes.

11Chill. Serve plain or with whipped cream.
