Raisin Nut Cake

- 1 c. boiling water
- 1 c. raisins
- 1 1/2 tsp. baking soda
- 3 c. sifted all-purpose flour
- 1 tsp. salt
- 3 eggs
- 2 c. sugar
- 1 c. oil
- 2 tsp. rum extract
- 1 c. chopped walnuts
Directions

1Pour boiling water over raisins.

2Let stand 5 minutes.

3Stir in baking soda.

4Sift flour with salt.

5Beat eggs with sugar, then beat in oil and rum extract.

6Stir in flour mixture, alternately with raisin mixture.

7Fold in nuts.

8Pour into greased and floured 8-inch Bundt pan or 10-inch tube pan.

9Bake at 350° for 1 hour. Cool in pan 15 minutes, then remove from pan and cool on cake rack.

10Serve warm, topped with ice cream.
