- 2 c. baby carrots
- 1 Serrano chile, cored, seeded and minced
- 1/2 tsp. salt
- 1 c. water
- 1 tsp. butter
- 1 Tbsp. maple syrup
- white pepper
Directions

1Combine carrots, chile, salt and water in 2-quart pan and bring to boil.

2Reduce heat to medium and cook until carrots are tender and only 1 tablespoon of water remains.

3Stir in butter, maple syrup and pepper to taste.
