Maple Flax Granola

Ingredients
- 6 cups old fashioned oats
- 2 cups coconut
- 2 cups peanuts (optional)
- 1 cup chocolate chips
- 1 cup raisins
- 1 cup maple syrup
- 1 cup brown sugar
- 1/2 cup canola oil
- 1 cup flax seed (optional finely ground)
Directions

1Preheat oven to 350°F.

2Combine syrup, brown sugar and oil in large microwaveable bowl.

3Cook at high power for 3 minutes.

4In another large bowl, combine oats, coconut, peanuts, chocolate chips, raisins and flax seed.

5Pour hot syrup mixture over oat mixture and stir well to combine.

6Spread granola mix out into two jellyroll pans.

7Bake 10 minutes then remove from oven and stir mixture.

8Return to oven and bake another 10 to 15 minutes or until golden brown.

9Cool to room temperature.

10Break apart into chunks and stoe in sealed container.
