Maple Flax Granola

Ingredients

  • 6 cups old fashioned oats
  • 2 cups coconut
  • 2 cups peanuts (optional)
  • 1 cup chocolate chips
  • 1 cup raisins
  • 1 cup maple syrup
  • 1 cup brown sugar
  • 1/2 cup canola oil
  • 1 cup flax seed (optional finely ground)

Directions

    Preheat oven to 350°F.

    Combine syrup, brown sugar and oil in large microwaveable bowl.

    Cook at high power for 3 minutes.

    In another large bowl, combine oats, coconut, peanuts, chocolate chips, raisins and flax seed.

    Pour hot syrup mixture over oat mixture and stir well to combine.

    Spread granola mix out into two jellyroll pans.

    Bake 10 minutes then remove from oven and stir mixture.

    Return to oven and bake another 10 to 15 minutes or until golden brown.

    Cool to room temperature.

    Break apart into chunks and stoe in sealed container.
