- 34 cup flour
- 1 13 cups sugar
- 12 teaspoon baking powder
- 12 teaspoon salt
- 6 egg whites
- 12 teaspoon cream of tartar
- 12 teaspoon vanilla extract
- 12 teaspoon maple extract (not syrup)
- 1 cup flaked coconut
Directions

1Mix flour with 1 cup sugar, baking powder and salt and set aside.

2Beat egg whites with cream of tartar and 1/3 cup sugar until soft peaks form, then add vanilla and maple extracts and beat until stiff peaks form.

3Fold flour mixture into egg whites.

4Fold coconut into egg whites.

5Fill paper cupcake liners 2/3 full (do not grease) and bake in cupcake pan at 300 degrees for about 40 minutes or until just golden.

6Let cool completely.

7For a real treat, top these with fresh strawberries and whipped cream.
