  • 3/4 c. whole wheat pastry flour
  • 3/4 c. oat bran
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 3 Tbsp. maple syrup
  • 3/4 c. skim milk
  • 1/2 c. raisins
  • 1/3 c. chopped pecans

Directions

    Oil small gem or muffin tins or line with baking cups. Preheat oven to 375°.

    Mix flour, oat bran, baking powder and cinnamon in large bowl.

    Combine oil, maple syrup and milk in another bowl.

    Add to flour and mix.

    Fold in raisins and pecans. Fill cups with batter.

    Bake 8 to 10 minutes or until light brown. Turn out on wire racks to cool.
