- 2 each chicken broiler
- 1 x flour, all-purpose
- 1 x salt and black pepper
- 4 tablespoons butter
- 2 each onions thinly sliced
- 1 pinch aniseed
- 1 pinch savory
- 8 tablespoons maple syrup
- 1/2 cup apple cider
Directions

1Quarter 2 very tender young broiler.

2Roll each piece in flour seasoned with salt and pepper.

3Brown in 4 tablespoon butter.

4Place the chicken pieces, as they are browned in an attractive ovenproof earthenware casserole.

5Add 2 large thinly sliced onions to the fat in the fry pan, brown, and pour on top of the chicken.

6Salt and pepper.

7Sprinkle with a pinch of aniseed and savory and pour 1 tablespoon maple syrup over each piece of chicken.

8Deglaze the frying pan with 1/2 cup cider or water and pour over the chicken.

9Bake 40 minutes, uncovered, in a 350F (180C) F oven.
