Maple Syrup Layer Cake

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup pure maple syrup
  • 2 teaspoons vanilla
  • 1/2 cup hot water
  • 1 cup finely chopped walnuts (optional)

Directions

    Cream butter and sugar well. Add in eggs, one at a time, beating well after each addition.

    Blend in maple syrup and vanilla.

    Gradually add sifted dry ingredients by thirds, alternately with the hot water; and ending with dry ingredients. Gently stir in walnuts.

    Pour into 2- 8 inch greased and floured layer pans.

    Bake at 350 degrees for 30-35 minutes.

    Cool on wire rack for 10 minutes. Remove layers and cool completely on wire racks.

    Frost.
