Mardi Gras Fruit Cake

  • 1 c. butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 1/2 c. sugar
  • 1 1/2 tsp. vanilla
  • 4 eggs
  • 2 1/2 c. flour
  • 2 tsp. baking powder
  • 1 c. chopped candied cherries
  • 1 c. chopped candied pineapple
  • 1 c. nuts
  • 1/4 c. flour

    Combine until smooth, butter and cream cheese.

    Add sugar and beat until fluffy.

    Stir in vanilla; add eggs, beating well after each.

    Stir together and add 2 1/2 cups flour and baking powder. Combine chopped cherries, chopped pineapple, nuts and 1/4 cup flour.

    Add creamed mixture.

    Spoon into greased bundt pan or 2 (9 x 5 x 3-inch) loaf pans and bake at 325° for 60 to 80 minutes. (Test for doneness after 60 minutes.)
