Ingredients

  • 6 medium onions, chopped
  • 2 green peppers, diced
  • 1/2 lb. mushrooms, sliced
  • 6 Tbsp. oleo
  • 1 small can pimentos, chopped
  • 2 (10 1/2 oz.) cans tomato soup
  • 1/2 pt. coffee cream
  • 2 red sweet peppers, cut in strips (if in season)
  • 1/2 c. chutney
  • 2 cans tuna
  • salt and pepper to taste

    Melt oleo.

    Add onions, green and red peppers and mushrooms. Cook until onions are transparent.

    Mix tomato soup and cream, then stir into onion mixture.

    Bring to a boil; cook a couple of minutes.

    Drain tuna; break into chunks and add.

    Add chutney last.

    Taste to correct seasonings.

    Serve over wild rice or fried noodles.
