- 1 medium eggplant
- 1 medium onion
- 1 large portobello mushroom
- 1 clove garlic
- 1 tsp. olive oil
- 1 tsp. Kosher salt
- 1 Tbsp. pesto sauce
Directions

1Peel and dice onion, garlic and eggplant.

2Saut onion and garlic in olive oil in a large skillet over medium heat until opaque.

3Add eggplant evenly over onion.

4Sprinkle with salt.

5Add portobello evenly; cover and reduce heat.

6Cook stirring occasionally until vegetables are tender, 10 to 15 minutes.

7Add pesto sauce and serve.
