  • 12 tablespoon olive oil
  • 12 cup onion, chopped
  • 12 cup mushroom, chopped
  • 12 cup zucchini, chopped
  • 1 garlic clove
  • 1 (14 ounce) canchopped Italian tomatoes
  • 12 teaspoon table salt
  • 12 teaspoon dried basil
  • 14 teaspoon black pepper, freshly ground

Directions

    Heat a medium saucepan.

    Swirl in the olive oil; add the onion, mushrooms and zucchini.

    Saute until translucent, about 3 minutes.

    Add the garlic and saute until just fragrant, 30 seconds more.

    Stir in the tomatoes, salt, basil and pepper; bring to a boil.

    Reduce the heat to low and simmer until thickened, at least 20 minutes and up to 1 hour.
