- 12 tablespoon olive oil
- 12 cup onion, chopped
- 12 cup mushroom, chopped
- 12 cup zucchini, chopped
- 1 garlic clove
- 1 (14 ounce) canchopped Italian tomatoes
- 12 teaspoon table salt
- 12 teaspoon dried basil
- 14 teaspoon black pepper, freshly ground
Directions

1Heat a medium saucepan.

2Swirl in the olive oil; add the onion, mushrooms and zucchini.

3Saute until translucent, about 3 minutes.

4Add the garlic and saute until just fragrant, 30 seconds more.

5Stir in the tomatoes, salt, basil and pepper; bring to a boil.

6Reduce the heat to low and simmer until thickened, at least 20 minutes and up to 1 hour.
