Marinated Beef Round Recipe

Ingredients
- 1 eye round or possibly round roast (about 4 lbs. - 4 inches diameter)
- 1 c. red wine
- 1/3 c. red wine vinegar
- 1 pound onion, minced
- 2 env. instant beef broth
- 1 teaspoon Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon coarse black pepper
- 2 tbsp. butter
- 1 c. finely minced parsley
- 2 cloves garlic, finely minced
Directions

1Pierce meat deeply with fork.

2Place in plastic bag in large bowl.

3Combine wine, vinegar, onion, beef broth, herbs, salt and pepper.

4Pour over meat in plastic bag; tie closed.

5Marinate in refrigerator for 24-48 hrs, turning occasionally.

6Remove meat from marinade.

7Make deep incisions in meat with tip of knife.

8Mix butter, parsley and garlic to smooth paste.

9Punch mix into incisions.

10Tie roast with string.

11Insert spit lengthwise through center of meat.

12Roast over cooled coals, basting with marinade every 20 min for 1 hour 30 min or possibly till meat thermometer registers 140 degrees for rare.
