Ingredients
- 1 lb. boneless beef shoulder steak, about 1-inch thick
- 1/4 c. minced onion
- 2 Tbsp. chopped parsley
- 2 Tbsp. white vinegar
- 1 Tbsp. olive oil
- 1 Tbsp. Dijon-style mustard
- 1 tsp. dried thyme leaves
Directions

1Combine onions, parsley, vinegar, oil, mustard, garlic and thyme.

2Place beef chuck shoulder steak in plastic bag.

3Add marinade, spreading evenly over both sides.

4Close bag securely and marinate in refrigerator for 6 to 8 hours, turning at least once.

5Pour off marinade.

6Discard.

7Place steak on rack in broiler pan so surface of meat is 3 to 4-inches from heat.

8Broil 18 minutes to desired doneness, turning once.

9Carve into thin slices to serve.
