Marinated Brussels Sprouts

  • 1 pt. Brussels sprouts (2 c.) or 2 (10 oz. each) pkg. frozen Brussels sprouts
  • salt
  • water
  • 1/2 c. thinly sliced celery (1 large rib)
  • 1 (14 1/2 oz.) can sliced tomatoes, well drained*
  • Lemon-Herb Dressing (recipe follows)
  • lettuce (optional)

Directions

    Cook sprouts in 2-inches boiling, salted water for 4 to 6 minutes or until just tender; drain.

    Place in shallow bowl with celery and tomatoes.

    Pour on dressing; cover and chill at least 2 hours.

    Drain before serving.

    Spoon into lettuce-lined bowl. Makes 4 servings.
