Marinated Carrot Strips

  • 4 large carrots
  • 12 cup red wine vinegar
  • 2 teaspoons sugar

Directions

    With a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.

    In a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.

    Drain and rinse briefly under cold running water.

    Place warm carrot strips in a small bowl.

    Add vinegar and sugar; toss to combine.

    Cover and refrigerate until ready to serve.
