Marinated Carrot Strips

- 4 large carrots
- 12 cup red wine vinegar
- 2 teaspoons sugar
Directions

1With a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.

2In a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.

3Drain and rinse briefly under cold running water.

4Place warm carrot strips in a small bowl.

5Add vinegar and sugar; toss to combine.

6Cover and refrigerate until ready to serve.

7Drain before serving.
