Marinated Carrots

Ingredients

  • 2 lb. carrots, pared and sliced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. prepared mustard
  • 1/2 c. salad oil
  • 3/4 c. cider vinegar
  • 1 can condensed tomato soup, undiluted
  • 1 large onion, chopped medium fine
  • 1 large green pepper, chopped medium fine

Directions

    Bring carrots with water to cover to a boil and boil 5 minutes.

    Drain and cool.

    Mix all other ingredients, then add carrots.

    Cover tightly and chill overnight.

    (Any marinade leftover may be refrigerated and used as a dressing for salad.)
