  • 2 bunches carrots, sliced
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 1/2 c. cooking oil
  • 1/2 c. vinegar
  • 1 c. tomato juice
  • 1 c. sugar
  • 1 Tbsp. dry mustard
  • salt and pepper to taste

    Let stand overnight.
