Marinated Carrots

Ingredients

  • 7 c. sliced carrots
  • 1 medium onion
  • 1 small green pepper
  • 1 (10 oz.) can tomato soup
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 3/4 c. vinegar
  • 1 tsp. mustard
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 tsp. pepper

Directions

    Cook carrots until tender.

    (May substitute three 16-ounce cans of carrots for fresh carrots.)

    Cool and drain.

    Cut onion and green pepper and mix with carrots.

    Mix remaining ingredients and pour over vegetables.

    Cover and marinate 12 hours.

    Keeps in refrigerator 2 weeks.
