- 1 bunch large carrots
- 2 cloves garlic, sliced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. olive oil
- 2 Tbsp. wine vinegar
- 1 tsp. oregano
Directions

1Scrape carrots and cut into thick slices.

2Boil carrots in water 10 minutes, or until tender, taking care not to overcook. Drain well and place in bowl with garlic, salt, pepper, oil, vinegar and oregano; stir and mix well.

3Let stand in marinade 12 hours before serving.

4When ready to serve, unmold on large serving plate.

5Surround with pineapple chunks, mandarin oranges or any fruit combination.

6Place fruit in the center, too.
