- 3 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 1 teaspoon mustard seeds
- 6 to 10 fresh thyme sprigs
- 1 de arbol chile
- 6 shallots, peeled and thinly sliced into rings
Directions

1Combine vinegar, water, sugar, salt, mustard seeds, thyme sprigs, and chile in a saucepan, and bring to a boil over high. Add shallots, stirring to separate shallot rings, and cook 1 minute. Remove from heat, and let cool 15 minutes before serving.
