- 1 bunch carrots
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. olive oil
- 2 Tbsp. wine vinegar
- 1 tsp. oregano
Directions

1Scrape carrots and cut into thick slices. Boil in water 10 minutes or until tender. Do not overcook.

2Drain well and place in bowl with garlic, salt, pepper, oil, vinegar and oregano.

3Let stand in marinade 12 hours before serving.
