Marinated Carrots

Ingredients

  • 2 lb. (about 5 c.) carrots, cook, drain and cool
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 can tomato bisque soup (can substitute can of tomato soup plus small to medium ripe tomato, cut in small pieces)
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. dry mustard
  • 1 tsp. Worcestershire sauce

Directions

    Mix last 7 ingredients and pour over vegetables.

    Cover and marinate at least 12 hours.

    Drain to serve (optional).

    Will keep for 2 weeks.
