  • 1 stick margarine
  • 1 c. sugar
  • 3 large, very ripe peaches, mashed
  • 2 eggs, beaten
  • 2 c. self-rising flour
  • 2 c. chopped nuts
  • 1 Tbsp. almond flavoring

    Cream sugar, margarine and almond flavoring.

    Add peaches and beaten eggs.

    Mix thoroughly.

    Add flour.

    Stir mixture quickly but being careful not to overstir.

    Pour mixture into 8 greased muffin cups.

    Sprinkle nuts over top of muffin batter.

    Bake at 350° until golden brown.
