Marinated Carrots

Ingredients

  • 2 lb. fresh carrots, sliced thin
  • 1 small green pepper, sliced in rings
  • 1 medium onion, sliced thin in rings
  • 1 can tomato soup
  • 1 c. sugar
  • 1 tsp. mustard
  • salt and pepper to taste
  • 1/2 c. Wesson oil
  • 3/4 c. vinegar
  • 1 tsp. Worcestershire sauce

Directions

    Dice and boil carrots in salt water until tender.

    Drain and cool.

    Alternate or mix together layers of carrots, pepper rings and onion rings in container.

    Mix remaining ingredients and pour over vegetables.

    Cover and refrigerate.

    Will keep a week under refrigeration and is better if make several days ahead and allowed to marinate before serving.
