- 2 lb. carrots, cleaned and sliced
- 1 purple onion, sliced thin
- 1/2 bell pepper, sliced thin
- 1 can tomato soup
- 1/2 c. sugar
- 1/2 c. vinegar
Directions

1Cook carrots until tender.

2Layer carrots, onion and bell pepper slices in Pyrex dish.

3Combine soup, sugar and vinegar in saucepan and bring to a boil.

4Pour over vegetables, cover and refrigerate.

5Serve cold.
