Ingredients

  • 1 lb. carrots
  • 1 medium onion, sliced thin
  • 1/2 c. vinegar
  • 1/2 c. Wesson oil
  • 1 can tomato soup
  • 1 bell pepper, sliced thin
  • 1/2 c. sugar

Directions

    Slice carrots in 1-inch sections and cook until slightly tender, about 15 minutes.

    Mix remaining ingredients in bowl. Drain carrots and turn into bowl while hot.

    Refrigerate in covered dish or in jars.

    Will keep for several weeks.
