Eggplant Casserole

Ingredients

  • 1 medium eggplant
  • 1 c. cold cubed chicken or other meat
  • 2 Tbsp. margarine
  • dash of pepper
  • 8 to 10 crackers, crumbled
  • 3/4 c. milk
  • 1/2 tsp. salt
  • 1 c. shredded cheese

Directions

    Peel and slice eggplant 1/2 inch thick.

    Parboil with salt until tender.
  3. 3
    Alternate in a baking dish, a layer of eggplant, chicken and cracker crumbs.

    Repeat until used.

    Pour milk over all and top with crumbs and pepper.

    Bake 30 minutes in a 350° oven. Put shredded cheese on top the last 10 minutes.
