- 1 medium eggplant
- 1 c. cold cubed chicken or other meat
- 2 Tbsp. margarine
- dash of pepper
- 8 to 10 crackers, crumbled
- 3/4 c. milk
- 1/2 tsp. salt
- 1 c. shredded cheese
Directions

1Peel and slice eggplant 1/2 inch thick.

2Parboil with salt until tender.

3Alternate in a baking dish, a layer of eggplant, chicken and cracker crumbs.

4Repeat until used.

5Pour milk over all and top with crumbs and pepper.

6Bake 30 minutes in a 350° oven. Put shredded cheese on top the last 10 minutes.
