Ingredients
- 1 cauliflower
- 2 c. water
- 3/4 c. olive oil
- 1/4 c. cider vinegar
- 1/2 c. lemon juice
- 3/4 tsp. dried fennel seed
- 1/2 tsp. dried thyme seed
- 1 small bag leaf
- 3/4 tsp. ground coriander
- 8 to 10 peppercorns
- 3/4 tsp. salt
- 1 stalk celery, sliced
- 2 cloves garlic, put through press
Directions

1Wash cauliflower and break into flowerets.

2Put all ingredients in large pot and bring to a boil.

3If cauliflower is too large, add water to cover.

4Boil about 10 minutes and allow to cool.

5Turn into bowl and chill at least 24 hours.

6Drain for several minutes. Serve as an appetizer or as a salad.
