  • 600 g hard Alpine washed rind cheese, rind removed
  • 250 g red onions, halved and cut into fine slices
  • 1 bunch chives, snipped into tiny rings
  • 5 tbsp white wine vinegar
  • 200 ml olive oil
  • 600 g mini mozzarella balls, drained
  • 100 g green olives, drained
  • 150 g kalamata olives, drained
  • 120 g pine nuts, dry toasted in a pan till golden
  • 1 sprig rosemary
  • 1/2 head fresh young garlic, peeled and coarsely chopped

Directions

    In a bowl, mix the cheese with the onions, chives, vinegar and 100 ml of oil. Season with pepper. Transfer to a sealable jar and refrigerate.

    Leaving a little unchopped for garnish, strip the remaining rosemary needles and chop finely. In a bowl, mix the mozzarella, pine nuts, olives, garlic, 100 ml oil and the rosemary. Season with salt and pepper. Transfer to a jar and refrigerate.

    Both types of cheese need at least 2 hours to marinate. Check seasoning just before serving. Serve garnished with the rosemary sprig with crusty bread or as pre dinner nibbles.
